PLAQ is a Paris chocolate maker that takes the process back to its starting point: the cacao bean. Rather than working only with ready-made couverture, PLAQ selects cacao beans from carefully chosen origins and transforms them in its own Paris manufactures — sorting, roasting, cracking and stone-grinding them before the chocolate is matured, tempered and moulded. The result is a distinctly contemporary approach to bean-to-bar chocolate in which the character of the cacao itself remains at the centre.

The recipes are deliberately simple. Cacao is paired principally with unrefined organic cane sugar, allowing differences between origins, percentages and beans to become part of the tasting experience.
