Born in 1947 in Brittany, Bernard Pacaud's journey to culinary excellence began at the age of 15 when he apprenticed under the legendary Eugénie Brazier in Lyon. This formative experience instilled in him a profound respect for traditional French cooking techniques and the importance of high-quality ingredients.
In 1981, Pacaud opened his first restaurant, L’Ambroisie, in Paris. By 1986, he had relocated it to the historic Place des Vosges, and in 1988, the restaurant was awarded its third Michelin star—a distinction it has maintained ever since, making it one of the longest-standing three-star establishments in France.
L’Ambroisie is renowned for its elegant, à la carte menu that showcases Pacaud's commitment to culinary perfection. Dishes are characterized by their refined simplicity, allowing the natural flavors of the ingredients to shine.
Though Pacaud passed the reins to his son, Mathieu, in 2012, he remains a guiding force behind the scenes, ensuring that the restaurant's standards of excellence are upheld.
