Together with Danièle Pacaud, he founded the restaurant in 1981 before establishing it on Place des Vosges in 1986, in the heart of Le Marais and Paris’s 4th arrondissement . For more than four decades, Pacaud developed an extraordinarily precise and personal expression of classical French haute cuisine.
Bernard Pacaud’s cooking became known for restraint rather than spectacle. Exceptional ingredients, exact technique and clarity of flavour took precedence over passing trends. His cuisine demonstrated how apparently simple compositions could become remarkable through balance, temperature, texture and an uncompromising attention to detail.
Under Pacaud, L’Ambroisie earned its third Michelin star in 1988 and retained its place among the great references of French gastronomy for decades. In 2025, an important new chapter began. At Bernard Pacaud’s request and with his involvement in the succession, Chef Shintaro Awa was chosen to take over the kitchens of L’Ambroisie. The succession was announced in June 2025, marking a carefully considered transmission rather than a break with the restaurant’s past.
Today, Bernard Pacaud is no longer the chef at L’Ambroisie. His importance to the restaurant, however, remains fundamental. Shintaro Awa leads the kitchen into its next era while preserving the standards, great French tradition and culinary heritage on which Pacaud built the Maison.
The historic setting remains part of that legacy. L’Ambroisie occupies an intimate position beneath the arcades of Place des Vosges, surrounded by the historic streets and galleries of the Marais. From here, visitors can continue through one of Paris’s most atmospheric neighbourhoods or towards the Seine River and Île Saint-Louis.
